Our Mouth is Watering Just Reading This Dark Chocolate and Sweet Potato Brownie Recipe

If you’re in the mood for brownies but want to cut back on sugar add a roasted sweet potato or two to your batter! These dark chocolate sweet potato brownies are delicious and (slightly) more nutritious than your average chocolate brownies, and can be made vegan, too!

The recipe comes from Australian made and owned functional coffee and beverage company, Beforeyouspeak Coffee’s healthy, better-for-you recipe book. Enjoy!

Ingredients

1 cup mashed sweet potato

½ cup almond butter – tahini is great for a nut-free option

1 egg or flax egg

¼ cup cacao powder

1 tablespoon vanilla extract

¼ cup monk fruit sweetener or coconut sugar

1 sachet Beforeyouspeak The OG Coffee or Glow Mocha

2 tablespoons filtered water

A pinch of salt

Dark chocolate, roughly chopped

White chocolate, melted

Method

Blend ingredients together

Pour into a baking tray

Bake at 175 C for 12-15 minutes

Chill

Please note, for the marble top layer, drizzle with melted white chocolate. As delicious as they are fresh from the oven, to fully experience the ultimate fudge factor, we strongly suggest you eat them chilled!
